If you like kippers you will love bloaters. These now hard to find whole, smoked herrings make a quick and mouthwatering meal. They only need their heads and tails removed and a few slashes made each side with a sharp knife. Lightly brush them with melted butter and grill them whole for 2-3 minutes each side. That’s it!
